Chole Bhature - North Indian Bread recipe!!!

Chole Bhature:




 
Chole Bhature is one of the delicious, spicy, exotic dish from Punjabi Cuisine. The crispy puffed Bhatura makes an excellent combo with hot & spicy Chole / Chickpeas curry. 

This dish is available in almost all Indian restaurants and it can be prepared at home easily. I found 2 kind of recipes for Bhature and tried both of them. The one using yogurt was unsuccessful for me since I was not able to roll it into sufficient thickness. So below is the recipe for the other successful option.
 
Bhature:
 
Ingredients:
 
  1. All Purpose Flour - 2 cups
  2. Egg - 2 nos.
  3. Milk - 1 cup
  4. Salt - to taste
  5. yeast - 2 pinch
  6. sugar - 1tbsp
  7. Oil for frying
How to Make Bhature!!!
 
  • Add yeast and sugar to milk and mix well
  • Beat eggs well and mix it with milk
  • Take All Purpose Flour in a bowl and add the above mix
  • Add baking soda and salt
  • Knead the mixture well until we get a soft dough.
 
  • Cover this with a clean wet cloth and set keep it for minimum 2 hours.
  • Make lemon sized balls from the dough.
  •  Roll each balls into the shape of pooris.
 

 
  •  Heat oil in a deep frying pan and fry them.
Bhature Ready :p !!!!!
 
 
 
Chole Masala:
 
Ingredients:
 
 
  1.  Chole/ Chick Peas - 1 cup soaked overnight
  2. Chopped Onion - 1/2 cup
  3. 3 Chopped green chillies
  4. Ginger chopped - 1 tbsp.
  5. Garlic chopped - 1 tbsp.
  6. 3 medium Tomatoes chopped 
  7. Oil - 3tbsp
  8. Chole masala - 3 tbsp.
  9. Salt - to taste
 
 For Garnishing:
  1. Coriander leaves chopped - 1 tbsp.
  2. Lemon juice - 1 tbsp

 How to cook Chole Masala!!!
  • Cook chick peas in a pressure cooker for 6-8 whistles or till it gets very soft.
  • Heat oil in a pan
  • Add ginger and garlic into it
  • Add onions and chillies. Sauté well until it turns golden brown.

  • Add tomatoes and mix well until it get smooth.

  • Add chana masala powder and mix for few seconds.

  • Add cooked chick peas into it along with the water remaining in pressure cooker. Stir well

  • Add salt and switch off the stove when it boils.

  • Garnish with coriander leaves and lemon juice.
