Chicken Manchow Soup!!! Spicy!!!!!




Manchow soup is a soup popular in Indian Chinese cuisine due to its ease of preparation and hot spicy taste. It is available in large restaurants and street food carts alike. Although the soup is named for Manchuria, the soup does not resemble any that is normally found in the cuisines of the region.
It is a dark brown soup prepared with various vegetablesscallions, and chicken (in the non-vegetarian version only), thickened with stock and corn flour, and flavored with relatively generous doses of soy saucesaltgarlic and chili peppers. This soup stuck into my mind from the day I heard it from my colleague that he had it from one of my favorite restaurants (I never went through these soups sections as I had least interest on it). He had it during winter time and explained that it is something superb to have during cold seasons. To be honest, my mouth watered that time (don't know whether he suffered its after effect :-p ). So I didn't forget to order this tempting soup in my next visit to this same restaurant and thus I tasted this yummy goodness. It was spicy at the same time it had lot of flavors in it. The whole soup was finished with a crispy noodle topping which really made it yummy!!!! I tried to recreate this soup and am posting it here. It is very easy to make.

Chicken Manchow Soup
Ingredients!!!!


  •  1 Cup cooked chicken pieces (I added lil chilli powder, chicken masala and a pinch of salt while       cooking)
  •  2 tbsp Oil 
  •  1 tsp Ginger, finely chopped 
  •  1 tsp Garlic, finely chopped 
  •  1 tsp Green chilies, finely chopped 
  •  1 tbsp Coriander leaves, finely chopped 
  •  2 tbsp Cabbage, finely chopped 
  •  2 tbsp Capsicum, finely chopped 
  •  2 tbsp Mushrooms, finely chopped 
  •  2 tbsp French beans, finely chopped 
  •  2 tbsp Carrots, finely chopped 
      (you can add as many vegetables as you can for making the soup richer)
  •  1 egg
  •  Ajinomoto (optional) I avoided this.
  •  4 Cups chicken stock (either home made or can use instant stock)
  •  4 tbsp Corn flour mixed with 1 cup water 
  •  1 tsp Pepper 
  •  1 tbsp Soy sauce 
  •  1 tbsp chilly sauce
  •  2 Stems of spring onion 
  •  Salt as required
 For Garnishing:
  • Raw Noodles fried
  • Spring Onion - green part chopped finely
    How to make Chicken Manchow Soup:
  
  1. Heat oil in a pan.
                         

   
2. Fry the ginger, garlic, and green chilies for 1 minute.

                                
  • Add Coriander leaves and fry for another 1 minute.
                                 
  • Add all the vegetables and keep stirring until they become soft.
                                  
  • Add egg into this in a wavy manner and stir well before it gets hardened.
                            

  • Now add cooked chicken, mix well.
                                    
  • Add pepper, Ajinomoto and salt to the mixture.
        

  • Combine the chicken stock, soy sauce and chilly sauce with it.
                                        

  • Bring it to boil, reduce the heat and add cornflour mixed with water and stir continuously until it thickens slightly.

  • Remove it from the fire.

  • Garnish with spring onion stems and fried noodles before serving.
